Yes, regular Indian food is stupidly hot. I personally don't like it and can't eat food that's too hot.
I don't have any knowledge about those hot sauces. But we have Bhut Jolokia pickles here. As many here might be aware, Bhut Jolokia is the hottest pepper in the world. I (literally) cried the only one time I tried it.

But I prefer those sauces, because they are much more durable than the peppers.
More money is always good, but putting up with people and their bullshit is not my cup of tea. I did once apply for a short time to cover for a level 5 and nearly did it again last weekend (but I ran out of time). I didn't get it, but the position itself doesn't involve too much liaising with members of the public, and supervises anywhere between 0-2 juniors.
