You have mo idea what beer you will drink, the beer is poured into the glass and given to you. Then without knowing the brewery, the brand or even the type you evaluate the beer and find it's qualities.

Hard as hell, but also very rewarding and sometimes surprising :)

I dunno, after a few pints I have no idea what beer i'm drinking anyway! :D The qualities always amount to: it gets me drunk. Yeeeeaaaahhhh!!! :D :D

Er, isn't Lambic supposed to have spontanious "gisting"? (sorry fi it is not clear, but I don't know the English translation for "gisting".)

Yes, but through my sources I can buy a yeast that is very similar to the actual spontaneous yeast stem (brettanomyses something) taht contains several different yeast stems as well as the lacto bacterias.

Excuse my ignorance, but how long will it take you to brew everything? Will I be able to taste one of your beers in early March, in exchange of a tasteless spanish beer? :D

well, each brew takes about 8 hours straight, then about 4 weeks before it's ready to drink.

The lambics will take longer.

I'll brew saturday and sunday each week end for three weeks straight, for my first 6 brews.

The number 6 will be split into half, then one will be the non-flavored lambic and the other half the yellow plum lambic.

The red plum lambic will come later.

According to plan the first beer will be ready for tasting on February 24th and the second one on Feb 25th.
So yes, a chance exist that some will be ready ;)

I do however still have some of the fall beers left, they are nice too, so you could taste from those if the new ones aren't ready ;)
