@Gnoff, can I save your stout for a long period, or do I have to drink it (relatively) quick? This because of this reason. We both want to try it, but if she can't (for now) it means that I have to drink it all alone. (and I KNOW she wants to taste it as well)

If you keep it cold and dark, storing it until say December might be ok.
But after that it would likely starting to be too old.

I wouldn't wait 9 months from now and expect it to taste as good as it does now.

True.
Though since it's not filtered and not pasteurized, the yeast will continue to work, though if stored cold it will be very slow.
The hops has a tendency to die fast though, but then you can enjoy the great malt selections instead ;)
