Eg one week i earn 1200$, next week i might only get 500$

but i can put in a claim at the end of financial year and hopefully get a return

Ahhh good deal. I work a set number of hours each week at an hourly rate. Then there's overtime on top of that (when the manager feels it's needed) OT is paid at 1.5x my regular rate.
