about how easy would it be for me, only speaking English, to travel around Europe? and especially northern Europe.

Scandinavia - shouldn't be a problem.
Germany - Usually not a problem.
Holland and Belgium - Usually no problem.
Some restaurants might not have English menus or even English speaking staff, but it just makes your dinner more interesting, since you don't know what you'll get

well I do know a bit of Spanish... it's not good, but it's a lot better than my German
sooo I could maybe survive in Spain, and Italian is somewhat similar to Spanish as well.
I guess I'll just have to hope for the best in France then
