Youth hostels you mean?
Ja.
If you have a dormatory, that might be noisy, but I had never had any problems.
Slept well, and you got a breakfast in the morning. (regular breakfast, milk/coffee/tea, bread, jam and cheese/meat)

It's not a really busy time of year though, I don't think it should matter.

never showed up that late but I think if you let them know in advance, it will not be a problem at all
