I have a train booked that arrives in Hamburg Hbf at 19:14 on Monday July 28th. I cannot find a train or a bus that goes from the train station to Itzehoe that night. Are there any buses or trains going from Hamburg to Wacken that evening? i'd rather not pay for a hotel in Hamburg if I don't have to, as 19:00 is still pretty early in the day and I'd like to be on site as soon as I can.

You should go to Itzehoe station!
There are 2 possibilities.
1: Take a RegionalBahn (regional train) from Hamburg Hbf to Itzehoe. (it ends there), and if I'm correct, every hour 09.
2: Take an S-Bahn to Hamburg ALTONA, and then the RegionalExpress (regional express train) to Westerland (Sylt), and get off in Itzehoe
From Itzehoe, there's a bus going to Wacken.
